Commercial Grades

Commercial grade is determined by maturity. Number 1 least mature, number 6 fully mature. Veil area, thin membrane between cap and stem, and cap form are primary focal points.

No breaks in veil, minimum length 2.5 inch

Minimum 50% of veil attached to cap.

Number 5
Slight curl or flat cap.

Number 6
Cap turned up, fully mature.

Damaged mushrooms are down graded according to severity of damage.
